What are the plastic shims and wave washer supplied with the bottom bracket for?
The extra shims are there to make up for frame tolerances. You should only need the wave washer, but if the bb shell is undersized, or has been faced, you'll need the plastic spacers. The best way is to assemble it up with the wave washer and see how much it compresses. After installation, if you can get the cranks to move to the drive side by pushing on the non-drive side crank, you should add a plastic spacer or two and try again. The spacers should be assembled between the left crank arm and wave washer.
It is best to put it on the non-drive side so that you can see what is going on, and to keep the chainline at 50 otherwise it pooches it out. If, due to chainstay clearance issues or if your running a chainguide, you may find you need to space the driveside crank away from the frame centerline. In this case, use the plastic shims. You'll still need to use the wave washer on the non-driveside.

Can I use my Fifteen.G cranks with a chainguide?
The fifteen.g crankset is designed around a 50mm chainline, the same as Shimano™. Chainguide usage will depend on chainline and may require ingenuity. ISCG05 chainguides work best, because the BB adapters have a large diameter than most. The larger bottom bracket adapters accommodate more durable bearings with bigger balls and may interfere with bottom bracket mount chainguides by E13™, Gamut™, and others.
